Pai Mu Tan

This exquisite, white tea grown in China's Fujian mountain region, is made from only the most delicate buds and leaves consisting of one shoot and two open leaves. With a stronger lingering flavour when compared with other white teas, Pai Mu Tan produces a light combination of floral, fruity and nutty flavours, this silky-smooth delicacy is the ideal introduction to the world of high-quality white tea.

Type: White tea

Origin: China, Fujian, Zheng he

Tasting notes: A pale yellow liquor with soft, velvety notes that are suggestive of honey, a lingering strong flavour compared with silver needles.

Temperature: 75-80 degrees

Brewing instructions: Western method: Approx. 1-2 scoops or 2-3 grams for every 150ml of water for 5-10 minute infusion

Gong fu method; 2-3 scoops or 5 grams for every 150ml of water. First infusion 15-25 seconds and then 30-60 seconds for up to 5 infusions.

Pair with: preferably taken on its own to fully enjoy this delicate brew or combined with light salads white fish or vegetables.
