An exquisite Oolong from the Dong Ding mountains of Taiwan. This hand-picked tea is said to be the descendant of ancient Chinese tea bushes. Dong Ding has a beautiful complex aroma and is particularly well-liked among coffee enthusiasts. Its name can be translated literally as “Climb to the mountain with cold feet”. The oxidisation of this tea can occur in one of two ways: By machine, or by charcoal. Typically, it is only 30% oxidised. Naturally sweet, strong and captivating, this versatile full-bodied, and refreshing Oolong is simply delicious!

Type: Oolong

Origin: Taiwan, Nantou, Aowanda

Tasting notes: A dark yellow liquor with tobacco aroma notes that slowly evolve into flowery vanilla and a pleasantly spiced after taste accompanied with nuttiness.

Temperature: 90-95 degrees

Brewing instructions: Western method; Approx. 1-2 scoops or 2-3 grams for every 150ml of water for a 5-minute infusion.

Gong fu method; 2-3 scoops or 5 grams for every 150ml of water. First infusion 15-20 seconds and then 30-35 seconds for up to 8 infusions.

Pair with:  The sweet notes go perfectly with fruit tarts, creme caramel and chocolate. Its softness makes it ideal for spicy foods, blue-veined cheeses, salmon, and lamb as well as beer.
